Toyota Center¹s Red and White Bistro located on the Lower Suites level features hardwood floors, a sparkling display kitchen, and views of all the action.

Eddie Romero is currently the Executive Chef at Toyota Center and has been since the opening day of the new Rockets Arena, WNBA’s Houston Comets, and IHL’s Houston Aeros. Eddies oversees all food production and execution, including Red and White Wine Bistro, 104 luxury Suites, 4 mini restaurants, 32 concessions and all catering events.

 Eddie started with the Levy Restaurant family in April 1991 in Chicago at Comiskey Park as supervisor for White Sox Luxury Diamond Suites; he quickly moved up to Sous Chef and after a couple years was promoted to Executive Sous Chef. Working with many talented Chefs during 10 years at Comiskey, including both FOH and BOH responsibilities, and after many years of hard work and dedication and commitment to world-Class Food service, Eddie was promoted to Executive Chef of the Chicago White Sox Park.

  Eddie earned an Associate’s Degree in Accounting in 1987, from his native country of Mexico; Eddie also considers himself a graduate of the Levy Restaurants in Cooking and Hospitality Arts. He has extensive experience in high-volume, high-quality restaurant avenues and kitchen management skills.  He acquired those skills through his strong work ethic in highly acclaimed restaurants, and major sports and entertainment facilities.  Eddie graduated from Levy’s “ Top Gun Program” in 2000.

Eddie was selected to be part of many openings, such a Kiel Center, Rams Stadium, Portland Trailblazers Arena, Miami Dolphin Stadium, Miami Heat Arena, Kansas City Chief’s, Staples Center, LA Oakland Arena and Ball park, Washington D.C., McCormick Place Chicago, Lincoln Park Zoo, Ravinia, Indiana Pacer’s Arena, just to name a few.   Eddie also supported major sports events like Miami Super Bowl, Oakland and Denver All Start Game, World Series and play offs, Gloria Estefan’s “ Bongos Cuban” restaurant in Miami.

Upon leaving The Levy Restaurant Group in 2000 at the Executive Chef position. Eddie was offered to be part of the management team of Kevin Costner and Jack Nicklaus’s Restaurant “The Club House” at Oak Brook Mall as Chef de Cuisine, a high volume restaurant with a country club environment, 3 banquet room facility, and serving 1200 ala carte meals daily. Although Eddie loved working in this environment, he thirsted for something bigger, wanting to work back in the sports and entertainment business again.

Eddie has shown extensive growth throughout his career. He started working for Levy Restaurants once again in 2002, but this time bringing more to the table: artistic culinary skills, passion, excitement and commitment.
